One of my friends at my grown up girl job is having a birthday today. Her 49th to be exact. That's big. So big, that it called for a little cupcake celebration.
I decided to try making filled cupcakes this time. Coconut creme filling in a coconut cupcake, with toasted coconut buttercream frosting.
Coconut isn't really a very strong flavor, and these came out just right; nice and tasty, not overpowering)
I think this flavor just became one of my top favorites.
